Barry Callebaut, one of the world's largest cocoa producers, have developed a fourth variety of chocolate, which is the world's first new chocolate variety in over 80 years. The new variety is called 'Ruby', to reflect the all-natural (and very on-trend) deep blush tones.

Head Chocolatier at KitKat Chocolatory, Connie Yuen, spoke to ELLE about the development of the new variety, explaining:
