Olof was born and raised in Iceland. She moved to the U.S with her family to get a doctorate degree in nursing at the University of Minnesota.

As a talented athlete herself, Olof has represented Iceland at international level in soccer and handball. Her interest in football began in 2010 when she and her husband, Kyle, got hooked on watching Minnesota Vikings' games on TV in Iceland. Occasionally, the couple even made trips to the U.S to watch the Vikings in person.

Now living in Eden Prairie, MN, she had no idea she'd been chosen as the Minnesota Vikings fan of the year until the team's star receiver, Justin Jefferson, surprised her at her son's practice session.

Her prize was the title, a Vikings jersey, and two tickets to this season's Super Bowl.
