Demetri Malki, owner of De Novo European Pub in Montclair and Edgewater, credits Cardoz with introducing him to Indian food.

"I went to Tabla and we got to talking," he said. "I told him I was a virgin when it came to Indian food. He sent out some naan and I was blown away. I fell in love with Indian food then."

Michael Cutney, chef and owner of The Twisted Oak in Tarrytown, also worked at Tabla. "He's the best chef I ever met," he said. A tough chef, he said, but a fair one.

He recalled that at Tabla, Cardoz had a room with more than 200 spices — none labeled. "He demanded that all cooks know what each spice was from smell and taste."

Melody Kettle, a former Montclair resident, who in 2013 launched the Montclair Food & Wine Festival in which Cardoz participated, recalls how generous Cardoz was.

"One year he donated 14 turkeys to the hungry," she said. "He was kind and passionate about his craft. This tragedy may give us inspiration to do something, maybe a tribute."
