My recipe for this low carbohydrate courgetti bolognese is perfect for the entire family, and is lower in calories than traditional spaghetti bolognese.

How so? Just swap out white pasta for some finely chopped courgettes. Simple!

Ingredients: 

– Lean beef mince 400g
– One beef oxo cube
– Worcester sauce
– Red wine
– Salt and pepper 
– Pancetta cubes
– 2 carrots
– 2 large courgettes
– 1/2 onion
– Fresh basil
– Half can tomato puree 
– 1 can chopped tomatoes

Spiralized courgettes make a healthier alternative to pasta in the classic spaghetti Bolognese - use turkey mince for a low - calorie sauce . Followed the recipe exactly. The sauce was nice but on top of the courgetti it was a sloppy mess. Think i will stick to pasta or potato if making again.

For this recipe you will need a pasta machine with a tagliatelle cutter. Flatten the reserved pasta dough slightly with a rolling pin, then starting at the lowest (thickest) setting, feed the Add the thyme and courgette and a little of the pasta cooking water. Stir in the butter and season with salt and pepper.

Method:

Begin by chopping the onion, basil and carrots and throw into a large pot with the mince, the pancetta cubes and some salt and pepper. Stir while cooking. 

Allow the mince to cook through and then add a splash of red wine and worchester sauce, the oxo cube, the tomato puree and the can of chopped tomatoes. Simmer for 30 minutes. 

Separately, either finely chop the two courgettes or spiralise them if you own a spiraliser (you can buy one in Dealz for €20). Flash fry the courgettes in some oil and salt and pepper for 2 to 3 minutes. 

Serving suggestion:

Throw some pesto on the courgetti for extra flavour and serve with the bolognese sauce. Sprinkle some Parmesan cheese on the top if you choose. Enjoy!
