But, until I spent time with the volunteers at Wandsworth Food Bank recently, I didn’t realise just how much they’re relied up by hundreds and thousands of households all across the UK.Approximately 14 million people live in poverty in the UK. Last year, Trussell Trust (the UK’s biggest network of food banks) distributed 1.6million 3-day emergency food supplies across their 1,200 centres. The most they’ve ever distributed.

When the weather outside is frightful, nothing satisfies our craving for comfort food quite like a good shepherd's pie. This turkey version is surprisingly light and SO easy to make. If you'd like to bulk it up with more veggies, frozen corn and/or frozen peas are a great addition!

For Filling
  • 1 tbsp.

    extra-virigin olive oil

  • 1

    large onion, chopped

  • 2

    carrots, peeled and chopped

  • 2

    small parsnips, peeled and chopped

  • 2

    cloves garlic, crushed

  • 1 tsp.

    fresh thyme

  • 1 tsp.

    fresh sage, crushed

  • 180 mL

    dry white wine

  • 680 g

    turkey mince

  • 3 tbsp.

    plain flour

  • 180 mL

    low-sodium turkey or chicken stock

  • 1 tbsp.

    freshly chopped parsley, for garnish

  1. Preheat oven to 200°C (180ºC fan).
  2. Make mashed potatoes: In a large pot over high heat, cover potatoes with water and add a generous pinch of salt. Bring to a boil and cook until completely tender, 16 to 18 minutes. Drain and return to pot.
  3. Use a potato masher to mash potatoes until smooth. Add melted butter, milk, and sour cream. Mash together until fully incorporated, then season with salt and pepper and fold in 100g cheese. Set aside.
  4. Make turkey mixture: In a large, ovenproof pan over medium heat, heat oil. Add onion, carrots, parsnips, garlic, thyme, sage and cook until fragrant and softened, 5 minutes. Deglaze with wine and cook 2 minutes more. Add turkey and cook until no longer pink, 5 minutes more.
  5. Sprinkle meat with flour and stir to evenly distribute. Cook 1 minute more and add turkey stock. Bring to a simmer and let mixture thicken slightly, 5 minutes.
  6. Top mixture with an even layer of mashed potatoes, sprinkle with remaining cheese and bake until there is very little liquid visible and mashed potatoes are golden, about 35 minutes. Grill if desired and garnish with parsley before serving.
