Directions
- In a large sauce pan over medium heat, combine blueberries, sugar, and lime juice. Cook, stirring frequently, until blueberries release their juice and mixture comes up to a boil, about 8 minutes.
- Continue cooking over medium heat until foam subsides and jam is thick, 12 to 15 minutes. Stir in lime zest and vanilla, transfer to clean glass jars, and let cool to room temperature.
- Transfer to refrigerator and cool completely.
