These Irish cream -infused chocolate truffles are perfect for special occasions. Roll them in melted chocolate, finely chopped nuts, or cocoa powder for a finishing touch.

Ingredients

  • 300 g

    good quality white chocolate, finely chopped

  • 100 mL

    double cream

  • 1 tsp.

    vanilla bean paste

  • 2 tbsp.

    Irish cream liquor

  • macadamia nuts, finely chopped (see GH tip)

  • roasted chopped hazelnuts, finely chopped (see GH tip)

  • icing sugar

Directions

1 Melt chocolate and cream in a heatproof bowl set over a pan of barely simmering water – don’t stir. Take off heat, stir in vanilla and Irish cream. Cover and chill for at least 4hr.

2 Scoop out portions with a teaspoon or melon baller, roll into balls and coat in nuts or icing sugar.

TO STORE Keep covered in fridge for up to 2 weeks.

GH Tip Whizz the nuts in a food processor until very finely chopped for best truffle coverage.
