200 g rice noodles200 g cocktail tomatoes4 spring onions150 g broccoli150 g rocket2 carrots200 g Eggplant1 teaspoon oil salt1 bunch mint for the dressing1 el soy sauce1 tl lime juice2 tple peanutmus3 el sesame oil Preparation: Pour the rice noodles with boiling water and for approx. Leave for 5 minutes. Then squeeze cold. Dice the eggplant and divide the broccoli in florets. Heat the sesame oil in a pan and sauté the eggplant in it. After 3 minutes, add the broccoli floors, season with salt and fry for another 2-3 minutes. Hydrate tomatoes. Cut the carrots into thin, round slices. Slice the spring onions. Wash the Rucola and tovert the mint.For the dressing peanut, sesame oil, soy sauce and lime juice mix well. If the salad should be eaten later, then add the dressing into an extra glass.Nun all ingredients for the salad fill in glasses and put the mint as a topping on it. Shortly before serving, pour the salad with the dressing and enjoy. You might like it too!
