Serves: 4

1 pound bison strip steak, cut into 1" cubes

4 tbsp. olive oil, divided

2 tbsp. Worcestershire sauce

2 tsp. balsamic vinegar

2 tsp. raw honey

2 tbsp. chopped

Oregano, divided

2 tbsp. chopped

Parsley, divided

1 clove garlic, chopped

Pink Himalayan salt

Ground black pepper

1 large red pepper, cut into 1" cubes

1 large zucchini, cut into 1" cubes

1/2 red onion, cut into large dice

8–10 baby bell mushrooms, halved

1. In a large resealable plastic bag, add the steak,

2. tablespoons of the oil, the Worcestershire sauce, vinegar, honey, 1 tablespoon of the oregano, 1 tablespoon of the parsley, the garlic, and a pinch each of salt and black pepper. Massage the marinade into the meat to coat, then refrigerate for 1 hour or up to overnight.

2 Preheat the grill to medium-high.

3. Place the red pepper, zucchini, onion, and mushrooms in a bowl and mix in the remaining 2 tablespoons oil, 1 tablespoon oregano, and 1 tablespoon parsley. Season with a pinch each of salt and black pepper.

4. To build kebabs, thread the meat and veggies onto separate skewers. Grill for 5 minutes on each side while basting both skewers periodically with steak marinade.
