Cooking spray, 1 (26 ounce) package frozen hash brown potatoes, thawed, 12 eggs, beaten, 1 cup milk, 1 tablespoon ground mustard, salt and ground black pepper to taste, 1 (16 ounce) package maple-flavored sausage, 1 (16 ounce) package shredded cheddar cheese.

1 16 ounce package pork sausage, 1 lb bag frozen hash browns (used diced hash brown potatoes), ½ yellow onion diced, 1 green bell pepper diced, 1 red bell pepper diced, 1 and ½ cup shredded cheddar cheese, 12 eggs, ⅓ cup milk, 1 teaspoon salt, ½ teaspoon ground black pepper.

Fact: You should be using a Crock-Pot to make breakfast. May we suggest this recipe for slow-cooker breakfast casserole? Instead of cooking the eggs, potatoes and bacon separately, you can do it all at once. (And you might actually get to enjoy that cup of coffee for a change.)

Ingredients:

3 cups frozen hash browns, thawed

3 tablespoons melted butter

2 cups shredded white cheddar cheese, divided

Salt and freshly ground black pepper, to taste

1¼ cups crumbled cooked bacon

1½ cups halved cherry tomatoes

1 bunch scallions, sliced

Slow Cooker Breakfast Casserole . I actually made this for dinner the other night and the hubs kept carrying on about how fantastic it was. It has all those wonderful summer flavors we are craving zucchini (you could use squash too), grape tomatoes, mushrooms and well… cream cheese

8 eggs

½ cup whole milk

Directions:

1. Grease the inside of the slow cooker with nonstick cooking spray.

2. In a medium bowl, toss the hash browns with the melted butter and 1 cup of the shredded cheese to combine. Season with salt and pepper.

3. Press the hash-brown mixture evenly into the bowl of the slow cooker. Arrange the bacon, cherry tomatoes and scallions on top of the hash browns.

4. In a medium bowl, whisk the eggs with the whole milk to combine. Pour the egg mixture over the bacon and tomatoes. Sprinkle 1 cup cheddar cheese on top.

5. Cook on high for 2½ to 3 hours. Serve immediately.
