It's a long holiday weekend, so why not use some of that extra time to set yourself up for the week? In less than an hour you can prepare 75 meatballs, most of which will go into the freezer for whenever you’re desperate for something effortless and ready-made. MONDAY: Spaghetti & Meatballs with a Tossed Salad

Preheat the oven to 500°F and cook the two dozen meatballs in the fridge as per the recipe. Cook 1 1/2 pounds of spaghetti until al dente—reserve half, tossing with just enough olive oil to prevent sticking, and refrigerate for Wednesday. Meanwhile, make a super-quick large batch of tomato sauce: Heat 3 tablespoons olive oil in a large heavy pot over medium-low. Cook garlic, stirring occasionally, until a few pieces are golden brown around the edges, about 5 minutes. Add canned tomatoes, crushing with your hands as you go, and their juices; season with salt and pepper. Increase heat to medium-high; bring mixture to a simmer. Cook, stirring occasionally, until sauce has thickened a bit, about 15-20 minutes. Purée with an immersion blender if desired, bring back to a simmer, and then add the meatballs to the sauce to coat. While the spaghetti and meatballs are cooking, prepare a simple salad: Toss chopped romaine, halved grape tomatoes, and shaved carrots with extra-virgin olive oil, red wine vinegar, salt, and pepper. Serve the pasta with grated Parmesan and red pepper flakes. Freeze half the sauce and cooked meatballs for Friday.

WEDNESDAY: Cacio e Pepe Pie with Roasted Zucchini

Using pre-cooked spaghetti gets this cheesy pasta pie on the table in around an hour. Since you’re not cooking the spaghetti tonight, you won’t have the pasta pot to use for heating the cheese sauce—you can either warm it gently, over low heat, in a small saucepan, or in the microwave. Once the pie is out of the oven, roast the zucchini: Preheat the oven to 450°F. Quarter the squash lengthwise and cut into small chunks, then toss with olive oil, salt, and pepper. Spread on a rimmed baking sheet and pop it in the oven while the pie rests. Roast until tender and browned in spots. Reserve about a half-cup of roasted zucchini and refrigerate for tomorrow, then serve the rest with the pasta.

FRIDAY: Meatball Parm Subs with Baby Kale Salad

Close out the week with a real crowd-pleaser—it’ll please you, too, since it comes together in minutes. Reheat Monday’s meatballs and sauce. While that’s going, toss the baby kale with lemon juice, extra-virgin olive oil, salt, pepper, and grated Parmesan, then set aside. Slice the fresh mozzarella (it’s easier if you pop it in the freezer for 10 minutes first). When the meatballs are hot, cut open the sub rolls and fill them.
