THURSDAY: Brown Rice Bowls with Corn, Steak, and Avocado

Tonight's dinner is make-your-own grain bowls. To start, take the brown rice and cooked steak you set aside earlier in the week out of the fridge. Slice the meat thinly (this is easier while it’s cold) and let everything come to room temp while you prep the rest of the ingredients. Heat a bit of olive oil in a large heavy skillet, preferably cast-iron, over medium-high heat and add 2 cups of the frozen corn (yes, still frozen) and a bit of salt. Cook, stirring occasionally, until the corn develops a bit of char. Transfer to a large bowl and add 2 cups of brown rice, 1/2 cup crumbled feta, a few chopped scallions, the juice of one lime, and a glug or two of olive oil, plus salt and pepper to taste. Now make a quick green sauce: In a good processor, purée 1 cup of yogurt, 2 cloves of garlic, 2 Tbsp. of lemon juice, 1 cup of basil and dill leaves, a hearty pinch of salt, and a few grinds of pepper until smooth. To serve, set out the sliced steak and grain salad separately, plus a thinly sliced avocado and the green sauce, and let everyone assemble their own bowls.
