Episode 6: Cookie Week

1. Rolling is imperative.

Just like tarts and pies, be sure to roll your cookie dough correctly. Make it too thin and they'll burn, make it too thick and they will be too soft in the middle.

2. Putting icing in plastic containers is such a good hack.

Dana does this to keep it at the right consistency as she bakes.

6. Pouring icing over cookies can be a hack.

This can make cookies more uniform, rather than spooning or slathering it on.


7. Cookies should be neat, even if they're fun.

Sometimes you can go crazy with a cookie concept, but if you can't duplicate it easily, it can make them look messy. Make it fun, but easy enough to do over and over.

8. Baking time matters.

A cookie that is under-baked won't get enough snap and flavor, but baking it too long, as we've probably all learned, can make them burnt.

9. You have to mold cookies when they're hot.


10. Some things just don't seem worth baking yourself.

The bakers had to make fortune cookies this week and really struggled. This just showed me that uh, yeah, just getting letting the takeout pros handle it seems easier.
