With its cylindrical shape, its cream color and its total absence of toppings, the chiffon cake does not look pretty. However, it has enjoyed tremendous success in recent years. On Instagram, nearly 500,000 publications contain the hashtag #chiffoncake and on YouTube, we can no longer count the number of recipes dedicated to this cake. Born in the United States at the end of the 20s, the chiffon cake was popularized by Asians, and in particular by the Japanese who love it. They revisit it in all sauces: with matcha, vanilla, coconut ... The peculiarity of this dessert? It is made in a high mold and is intended to be very light and airy because it does not contain butter, but egg whites whipped to snow. It can be enjoyed on its own, with ice cream, hot chocolate or covered with jam or spread. Very quick to make, it only requires ingredients that we all have in our cupboards: flour, eggs, yeast ... In France, the pastry chef Sébastien Bouillet, who has several shops in Lyon and its region, has made it one of its specialties.
