They revisit it in all sauces: with matcha, vanilla, coconut ... The peculiarity of this dessert? Sébastien Bouillet's chiffon cake recipe
For 6 to 8 people
Rag cake mold Ø 18 cm x H. 8 cm (if not use a sponge cake mold)
Ingredients25 g egg yolk 20 g d grapeseed oil ½ vanilla bean 1 pinch of salt 35 g sugar 140 g flour 1 g baking powder 70 g egg white
In the bowl of a mixer, whisk together the yolk of egg, oil, vanilla (split and scrape the pod with the tip of a knife), salt and 1 pinch of sugar.
Sift the flour and the baking powder then gradually incorporate them into the preparation. Mix until you get a homogenous paste.
Next, beat the egg whites with the remaining sugar to obtain a meringue. Then gently incorporate it into the first preparation.
Pour the appliance into the mold and cook at 170 ° C for around 40 minutes.
