A word about using Culinary Coconut oil in this recipe. I like the flavor of coconut oil in my baked goods, but some people don’t. If you don’t like the coconut oil flavor, don’t worry! Barleans Culinary Coconut Oil is flavorless and does not affect the taste of foods.

The other great thing about this recipe is that the pancakes freeze very well. It’s not hard at all to quadruple this recipe. The hard part is snagging the fluffy vegan pancakes away from your family so that some of them end up in the freezer. ????
