American Airlines has become the first airline partner of the James Beard Foundation — and it’s getting an in-flight dining menu to match.

On Tuesday, the airline announced new first class and in-lounge dining menus created by James Beard Award-winning Sarah Grueneberg, a former “Top Chef” contestant and the head chef of Monteverde Restaurant & Pastificio in Chicago.

“The ability to provide Flagship travelers with a small taste of Monteverde is an extraordinary opportunity, and I’m truly humbled to be the first chef chosen to bring this collaboration between the James Beard Foundation and American Airlines to life,” Chef Grueneberg said in a statement. “The dishes created channel the classic Italian approach to cooking by focusing on simplicity, great flavors and quality ingredients that we believe will resonate deeply with guests.”

The exclusive new menu will be available starting December 3 in Flagship lounges and December 11 inflight for Flagship First and Flagship Business passengers. The new offerings will be available on flights from the U.S. to Europe and South America and onboard transcontinental flights between New York and Los Angeles or San Francisco.

The food selection includes Chef Grueneberg’s takes on Italian classics. There will be dishes like mushroom bolognese with fusilli pasta, cremini and porcini mushrooms, Tuscan kale salad with beets, apples, goat cheese and spiced sesame, and artichoke ravioli with blistered cherry tomato sauce and green olive pistachio pesto.

In-flight menu items can be pre-ordered from 30 days to 24 hours before the flight.
