Nervous fliers and celebrity sightings are just a regular day of work for flight attendants.

First and foremost, a flight attendant's most important job is to keep air passengers safe. But with a career that requires weekly international travel and meeting hundreds of people each day, you can bet they have stories to tell. Delta flight attendant Ron Walk recently marked 30 years with the airline. We sat down with him to discuss how cabin crew spend their breaks, what they notice about fliers, how the industry has changed, and who the friendliest celebrity passenger is.

How did you become a flight attendant?

I was looking for a career in the airline industry, and started out in reservation and sales. I kept running into an old classmate who was a flight attendant, and he'd always tell me what a great job it was. Then one time, I was flying to L.A. to spend time with my sister, and he had all the flight attendants come sell it to me during the flight! They showed me their schedules, and I saw they'd work for two or three days, and the rest of the week was off time. I started to imagine that life for me, and didn't sleep at all that night. When I got home, I spoke to my supervisor, he set me up for an interview, and then I was in training and a whole new life. Here we are, 30 years later.

How has the job changed since 1990?

Obviously, technology has been the biggest [change]. From our side, we used to be unable to communicate with our friends and families most of the week. Now we can talk to them all the time. Our schedules are also far more flexible—we're able to pick up and drop flights easily in the scheduling system. From the passenger side, I think people used to expect that there'd be a bad meal, one movie at a time if that, luggage might get lost, and the flight might land late. As flying has improved, so have people's standards. When we have tech challenges now, attendants have to perform a level of service and support that we never had to before.

Has the rise of personal electronics made cabins quieter?

Absolutely. As recently as 15 years ago, I was working the Portland to New York route often, and we had lots of aircraft with no entertainment at all. Then, all you had was your seatmate to talk to. I remember so many great encounters and conversations with my seatmates from past years that wouldn't happen now. Today, when you hear a conversation in the cabin, it almost stands out! Because there are two people talking for a couple hours in a cabin that's otherwise silent.

How much does a passenger's body language affect how you serve them?

In a big way. When you see people who do want to engage, my device in front of me tells me the names of whoever I'm talking to, so I can address them by their name, which is always powerful. On a recent flight to London there was a couple, whose name was Mr. and Mrs. Olivier, who were just delighted by the fact I kept mentioning them by name. Some flight attendants think people only want to be left alone, and of course some do, but given the opportunity a lot of people do want to talk for a minute.

I've flown with Jimmy Carter on many occasions, and he always greets the whole cabin. It's always really beautiful to see. He literally greets every person, says hello to them, and walks down the full cabin until he's done. Those are some of my fondest memories.

How much time do you get off between flights?

In general, we have a 24-hour break, which is definitely enough time to recover. The most common question we get from passengers is "How do you do it?", but in all honesty your body acclimates to it, and we're so busy during the flight that it passes much more quickly for us than it does the passengers. Of course, getting sleep is key. Even when it's so easy to be distracted by beautiful cities and old friends in those places, which can make it hard to get the sleep you need.

New York to London is such a short flight. We normally get three hours each to have a rest period, where we can go down to a lower crew level and lay down for a while. On that London flight, you each get 30 minutes.

Delta recently relaunched their international main cabin service, and many of us were involved. What I know is a sure winner for everyone is our clearance, when we pick up the dirty trays and meal service. Before, we had to manage all that clutter do Jenga-level work, often on our knees, to get it back in the cart. Now we have large collection boxes where we literally drop everything into the box, save for the platters to clean and reuse. A huge win. We also now offer complimentary Bellinis and chocolates in the main cabin, which is a new opportunity to engage with the customers in a relaxed way. Initially, pouring and mixing the Bellinis individually as we moved through the cabin was taking so long that the whole idea was on the chopping block for a minute. The attendants had this trending hashtag, #SaveTheBellini, as we felt it was at the heart of the new service! Then we had the wedding idea: to make them all in the back, and then carry the drinks down the aisle for whoever wants one. It's so fast and easy: a real improvement.

Lastly, what clothing and luggage options are most important to attendants?

A good collapsible parka that can pack well and keep you warm, while also providing a little style on layovers. When it comes to luggage, it's all about the quality of the wheels.
